Chilli Rocket Butter
Recipe for a spicy-hot herb butter
Quick and easy to prepare and a perfect addition to the barbecue. This Chili Rocket Butter gives beef and pork steaks a spicy and extraordinary touch. It also goes well with chicken or turkey breast and fish. But you can also use it to enhance a delicious vegetable stir-fry or simply enjoy it on crusty baguette.
Ingredients:
150 g soft butter
50 g rocket
salt, pepper
a little lemon zest from an organic lemon (untreated)
1/2 tsp chilli flakes
(we recommend Trinidad Scorpion Butch T. for meat dishes, if you prefer something milder: Jalapeno Flakes, Lemon Drop Flakes for poultry and fish dishes)
Preparation
Wash the rocket carefully and remove any hard stems if necessary. Dry the rocket carefully or use a salad spinner. The rocket should be dry for further processing.
Finely chop the rocket with a sharp knife or herb chopper.
Beat the butter with a hand mixer until creamy. Then fold in the rocket, chilli flakes, salt, pepper and the zest of the lemon.
Now form the butter into a roll using cling film and refrigerate for a few hours. This will help the butter to firm up and make it easy to cut into slices later.
