Frittata
Recipe for a fiery frittata
A frittata is an Italian omelette with potatoes and vegetables - similar to the Spanish tortilla. A frittata is served as a main course or as a snack with an aperitif. It tastes good both hot and cold.
Ingredients (serves 4):
10 eggs
300 g waxy potatoes
80 g diced bacon
1 red bell pepper
1-2 red chillies
200 g peas
1 onion
2 garlic cloves
1 bunch spring onions
100 ml milk
Salt
pepper
Preparation:
Peel the potatoes and cut them into thin slices. Heat 1 tablespoon of oil in a pan and fry the potatoes over medium heat for about 10 minutes. Stir again and again, then remove the potatoes.
Peel and finely chop the onion and garlic. Wash the pepper and cut into strips.
Finely chop the chillies.
Cook the bacon in a high non-stick frying pan. Then remove from the pan and add a little oil and fry the onions with the garlic for 1-2 minutes. Add the peppers and fry for another 1-2 minutes. Add the peas, spring onions and the chopped chilli and allow to sauté briefly.
Now put the potatoes and bacon back into the pan. Mix everything together well.
Whisk eggs with the milk and season with salt and pepper.
Pour the egg milk over the vegetables and cook the fittata over a medium heat for about 10 minutes, then turn over and cook for another 10 minutes.
Place a large plate on the pan and turn the frittata out of the pan (be careful, it`s hot!).
Serve with crusty baguette and a green salad.
