German Goulash Grandma´s Style
Ingredients (serves 5):
1200 g beef goulash
600 g onions
700 ml beef stock
200 ml red wine
2 cloves of garlic
2 bay leaves
2 tbsp paprika powder, sweet
1 tbsp hot paprika powder
1 tbsp smoked paprika powder
2 tbsp chipotle tomato purée
clarified butter
salt
black pepper
Preparation:
Peel, quarter and dice the onions and garlic cloves. Set aside.
Melt clarified butter in a large pot and sear the goulash cubes on all sides. Sprinkle some of the smoked paprika powder on top.
Mix the remaining paprika powder (smoked paprika, hot paprika and sweet paprika) with the onions, the bay leaves and the tomato paste. Add to the meat in the pot and stir well. Deglaze with the red wine and beef stock.
Braise the meat in the seasoning mixture for about 90 - 120 minutes on low heat (remove the bay leaves after approx. 30 minutes). Season the goulash with salt and pepper.
Serve the goulash with noodles or potato dumplings.
