Meatballs Catalan Style
Meatballs Catalan Style ( for 3 people)
Versatile, delicious with fresh mushrooms - the Catalan meatballs always make a good party. Whether on a summer buffet or a visit from friends, these tasty meatballs are sure to delight.
Ingredients:
500 g mixed minced meat
200 g strained tomatoes (from a can)
250 ml meat stock
250 g mixed mushrooms
1 large onion
2 cloves of garlic
2 carrots
1 egg
1 tbsp mustard
1 tbsp tomato paste
50 g olives
3 stalks fresh flat-leaf parsley
breadcrumbs
Salt and pepper
Olive oil
Preparation:
Peel onion and garlic and cut into very fine cubes.Wash and chop the parsley. Peel carrots as well and cut into thin slices. Heat the oil in a pan and fry half the onion and garlic until lightly browned, remove from the heat and set aside.
Put the mince in a bowl, add the rest of the onion garlic mixture, the egg and about 2 tbsp breadcrumbs. Season with salt and pepper. When the mixture has the right consistency for shaping, form 2 - 3 cm balls from it, otherwise add a little breadcrumbs. Brown the finished balls in a frying pan with oil until golden brown on all sides, then put to one side.
Return the pan with onions to the plate, let it heat up, then add the carrots. Add the tomato purée and the strained tomatoes to the mixture, then add the 250 ml meat stock. While the sauce is simmering, cut the olives into fine rings and add them to the sauce together with the chopped parsley. Simmer on medium heat for about 10 minutes.
Meanwhile, clean the mushrooms, quarter them and brown them in the other pan shortly. Season the mushrooms with a little salt and pepper and add to the sauce. Place the meatballs in the sauce as well, cover and cook over a medium heat for another 5 minutes.
Arrange on the plates and serve best with fresh white bread.
