Meatballs Catalan Style
Swedish cult on every table - whether home-cooked or tasted at IKEA, the creamy meatballs are a "must" for every fan of the North. But if you don`t get the chance to enjoy this delicious dish at others` houses, here`s a great recipe to try at home.
Ingredients:
600 g mixed minced meat
50 g bread from the day before
1 large onion
2 cloves of garlic
1 egg
3 stalks fresh flat-leaf parsley
2 cm ginger
1 tsp paprika powder, sweet
1 tsp salt
Pepper
oil
Sauce:
1 tbsp butter
250 g mushrooms
100 ml white wine
100 ml vegetable stock
200 ml cream
2 stalks fresh parsley
1 glass cranberries
Preparation:
Place minced meat in a bowl. Peel and finely chop onion, ginger and garlic and add to the mince. Pluck the parsley and also chop finely, cut the bread into fine cubes, add to the mince mixture with the egg and the spices and work into a mixture. Form 2 - 3 cm balls from the mince mixture.
Heat the oil in a frying pan and fry the balls until golden brown. Then place in an ovenproof dish and keep warm in the oven.
Brush the mushrooms with a mushroom brush, shorten the stalk and cut into slices.
Melt butter in a pan and fry the mushrooms in it. Deglaze with the wine and reduce nearly completely. Add the vegetable stock and the sauce cream and simmer for about 10 minutes on a medium heat, stirring. Season the sauce, add the meatballs and heat again briefly.
Divide the meatballs between the plates and decorate with parsley and cranberries. Serve with mashed potatoes or noodles.
