African Frango Piri-Piri
Recipe for Frango Piri-Piri
The delicious marinated chicken legs, a recipe from African cuisine which is sure to delight real chilliheads.
Ingredients for 4 persons:
8 chicken legs ready to cook
6 tbsp olive oil
5-6 red chilli peppers
2 bay leaves
1 tbsp sweet paprika
1 tsp sugar
1 tsp salt
Preperation:
Preheat the oven to 200 °C top/bottom heat / 175 °C convection oven.
Wash and dry the chilli peppers, then clean, seed and chop finely. Mix the olive oil, paprika, 1 tsp salt, 1 tsp sugar and the chillies to make a marinade.
Take the chicken drumsticks out of the fridge, wash and pat dry. Brush all over with the marinade, then place in a large roasting tin. Place the bay leaves in the roasting tin. Roast in a hot electric oven top/bottom heat: 200 °C / convection oven 175 °C - 45-50min, pulling out from time to time and brushing with gravy.
Serve with pita bread and salad.
