Lamb Chili con Carne
Recipe for a delicious lamb chili con carne
Chili con Carne is traditionally a long cooked stew of beef, chillies and tomatoes. These ingredients were very cheap in cattle country in the early part of the 19th century, and a A real Texas chili contains no beans. This chili is quite spicy, but not in a burn-your-mouth kind of way, but with a warm smoky taste. The secret is to simmer a few good ingredients for a long time.
Ingredients for 4 persons
1000 g lamb mince - alternatively beef mince
300 g onions
5 cloves of garlic
10 whole Chipotle Chilis
5 whole dried Ancho chili
2 tblsp Chili con Carne spice mixture
2 cans San Marzano tomatoes a 400g
Olive oil
1 heaped tblsp of brown sugar
2 tblsp of lemon juice
100 ml of water
Salt, pepper
Preparation
When you buy lamb mince, pay attention to a fat percentage of 20%. The same applies to beef, since lean meat has a distinctly better taste.
Sear the lamb mince in a pan with olive oil along with the chopped onions and garlic. Core and remove the stems of the dried Chipotle and Ancho Chillies. You can use the complete pods of the Chipotles, but the Anchos should be cut into 3cm pieces. After 10 minutes of searing, pour all remaining ingredients into the pan and stir well.
Simmer for at least 2 hours on a low flame and with a closed lid.
Youll get a simple and purist dish, which is incredibly delicious. Due to the chipotles smoked over pecans wood, this chili con carne has an incredibly warm and round smoky flavour. This is best served with flatbread or baguette.
