Shish Kebab - Lamb Skewers
Tender and spicy marinated lamb kebabs from the grill or pan
Shish Kebab are traditional grilled meat skewers of Turkish and Arabian cuisine, made from marinated lamb meat with tomatoes, peppers and chillies. The meat is delicately tendered by the marinating and is traditionally served with pita bread, cacik (Tzatziki) and bulgur salad.
Ingredients (for 4 persons)
700 g of lamb leg (without bone)
1 red and green bell pepper
4 tomatoes
4 fresh chillies
1 large onion
2 cloves of garlic
½ bunch of parsley
2 tblsp lemon juice
4 tblsp olive oil
1 tblsp paprikapulver noble sweet
2 tsp cumin, ground
Salt, pepper
Preparation
Rinse lamb meat, pat dry and cut into 1 inch-cubes. Peel onion and garlic. Chop onion very finely, press garlic. Wash parsley, shake it dry, pluck the leaves and finely chop them.
For the marinade mix onion, garlic, parsley, lemon juice, paprika powder, cumin, olive oil, salt and pepper in a bowl. Add lamb cubes, toss until evenly coated and marinate for 6 hours (or overnight) in the refrigerator.
Wash the peppers, core them and cut into 2 inch pieces. Wash tomatoes, remove stalks and cut into eights. Wash the chillies, halve them longitudinally, core them and cut into 1,5 inch pieces.
Thread the cubes of meat onto the thin skewers, alternating with peppers, tomatoes and chillies. Set up the grill for direct grilling and preheat to high, or preheat the oven or heat a pan with some oil. Grill, turning to cook evenly, for approximately 10 to 15 minutes, until the skins on the vegetables are blistered and browned and the lamb is browned and done to taste.
Serve with rice or fresh flat bread, Cacik (Tzatziki) and salad (Bulgur salad, for example).
