Spicy Shakshuka
Kick-start your morning with this spicy baked eggs recipe
Preparation time approx. 15 min.
Ingredients (serves 1):
200g tinned chopped tomatoes
2 eggs
1 tablespoon olive oil
2 teaspoons Trinidad Scorpion
1 teaspoon smoked paprika
1 teaspoon cumin
½ onion
¼ red bell pepper
¼ green bell pepper
¼ yellow bell pepper
pinch of sea salt
pinch of sugar
fresh parsley or coriander to garnish
Directions:
Finely dice the onion. Cut the bell peppers into strips.
Place the oil, onion, bell peppers, cumin, paprika, salt and sugar in a skillet (or oven proof pan) and fry for 5 minutes. Add chopped tomatoes, stir.
Make two craters in the sauce and crack an egg into each crater.
Transfer pan to the oven, gas mark 6 (180-200°C) and cook for 10 minutes or until the eggs are cooked to your liking.
Sprinkle parsley on top for garnish.
Serve with some crusty bread or flat bread to mop up the sauce.
