Hot Mango Papaya Salad
Recipe for hot Mango Papaya Salad
Sweetness meets spiciness and becomes a unique taste experience, perfect for the hot days.
Absolutely delicious, fiery and lots of intense fruitiness from the mango and Papaya.
for 4 persons
2 mangos
1 papaya
1 red chilli
1 organic lime
2 tbsp olive oil
3 tbsp salad oil
3 spring onions
2 stalks mint
2 stalks coriander
1 tin of sweetcorn
1 cup sour cream
50 g cranberries
salt, pepper, nutmeg
a little passion fruit juice
Fireland Honey Habanero Sauce
Peel and quarter the papaya, then remove the seeds and cut into small cubes or thin strips. Then peel the mango as well and remove the flesh from the core, either cut into small cubes or thin strips.
Then cut open the chilli and remove the seeds, then cut into very small pieces.
Wash the spring onions and cut into thin rings, fry in a little olive oil in a pan until lightly browned.
In the meantime, wash the lime well, grate the zest with a grater and place in a salad bowl. Then halve the lime and squeeze it, adding the juice to the salad bowl as well. Add the sour cream, a little passion fruit juice. Mix the salad oil and the spring onions into a sauce, season with a little Fireland Honey Habanero Sauce and salt, pepper and nutmeg.
Wash and chop the coriander and mint, then chop the cranberries and add to the salad dressing along with the sweetcorn, chilli, herbs, mango and papaya, mix well and chill for at least 1 hour.
Season again before serving. If the sauce is too firm, add a little passion fruit juice. Serve with freshly grilled white bread.
