Spicy Bulgur Salad with Marok-Pesto
Recipe for spicy bulgur salad with marok pesto and chilli sauce
A delicious side dish with grilled meat or as a main course on hot summer days. As it is easy to prepare, it is ideal for buffets.
Ingredients (serves 4):
250 g bulgur
approx. 500 ml water
juice of half a lemon
40 g tomato paste
2-3 tbsp Marok pesto
1 dash chilli sauce (to taste)
1 tsp paprika powder hot
½ tsp paprika powder sweet
½ tsp ground cumin
1 red onion
2 fresh pointed peppers
2 medium tomatoes
½ bunch coriander
½ bunch flat-leaf parsley
6 tbsp olive oil
Salt & pepper
Vegetable stock
Preparation:
Put the bulgur in a bowl, pour 1 tbsp vegetable stock over the bulgur and pour boiling hot water over it so that the bulgur is just covered. Cover with a kitchen towel and leave to soak for 10-15 minutes. If the bulgur has not absorbed all the water at the end of the soaking time, pour off the excess water.
During the soaking time, wash the pointed peppers and tomatoes, remove the seeds and cut them into small pieces. Peel and finely dice the red onion. Wash, pluck and finely chop the parsley and coriander. Squeeze the lemon.
For the dressing, mix together the olive oil, lemon juice, tomato paste, Marokn pesto, chilli sauce and the spices and season with salt and pepper.
Put the bulgur in a salad bowl and add the dressing. The bulgur may still be lukewarm. Then mix in the diced peppers, tomatoes, onions and the parsley and coriander. Put the salad in the fridge and let it marinate for at least 1 hour.
The bulgur salad tastes best with freshly grilled food or white bread.
