Summer herb gnocchi
Recipe for summer herb gnocchi
The herb gnocchi with fresh tomatoes are the perfect Mediterranean dish to enjoy after work with a delicious glass of red wine on the balcony or terrace.
Ingredients (serves 2-3):
For the herb gnocchi:
1 packet of gnocchi
2-3 tbsp oil
2 sprigs of thyme
2 sprigs of marjoram
2 sprigs of parsley
2 sprigs rosemary
1 pinch of salt
1 pinch of pepper
1 pinch of nutmeg
Other ingredients:
500 g cherry tomatoes
1 fresh chilli (optional)
2 shallots
2 tbsp oil
30 g capers
1 pinch of salt
1 pinch of pepper
50 g butter
Preparation:
Preparation of herb gnocchi:
Wash and pluck the herbs, then chop finely.
Place the gnocchi in a bowl with a lid and pour over the oil.
Sprinkle with salt, pepper and nutmeg and add the chopped herbs.
Close the bowl and give it a good shake so that the herbs and spice mixture are well distributed. Leave the gnocchi to stand in the fridge for about 30 minutes.
Preparation of the gnocchi pan:
Wash the tomatoes and remove the stalk, then cut the tomatoes into quarters.
Wash the chilli, cut open, remove the seeds and chop very finely.
Peel and finely chop the shallots. Take a pan with high sides and heat the oil in it. Sauté the shallots, chilli and tomatoes for about 5 minutes.
Then season with salt and pepper, add the capers and sauté for a further 2 minutes, then put to one side.
Melt the butter in another pan, take the gnocchi out of the fridge and fry in the hot butter until crispy. When the gnocchi are lightly browned, put the other pan back on the heat and add the gnocchi. Mix everything together well and reheat briefly.
The perfect Mediterranean summer dish is ready and can be served =)
