Recipe for delicious Pimientos de Padrón - fried green peppers refined with sea salt
This delicious Spanish Tapas recipe is easy to prepare and a fantastic tasty fingerfood.
It comes from the area around Padrón in Galicia / Spain.
Pimientos de Padrón have a typical and unique taste, and about 1 in a 100 will be quite a bit hotter than the rest. Be sure to use the real padron chillies to get the typical Spanish Tapas taste!
Ingredients
500 g of Pimientos de Padrón / Padron Chillies
Approx. 1 litre of native olive oil
Sea salt, Fleur de Sel
Preparation
Wash the Pimientos and dry well. Heat the olive oil in a skillet, saucepan or wok (3 - 4 cm high). The oil is hot enough when a bread dumpling begins to simmer. The oil must not smoke!
Add the Padron chillies in portions of 10 to 15 for 2 to 3 minutes – or a bit more, at medium heat while stirring constantly. Once the chili peppers have blisters all around, they are done.
Transfer the chillies to a plate and sprinkle some sea salt / Fleur de Sel over them. Serve them hot with fresh baguette, black olives and Serrano ham.
