Spicy Chicken Wings
Recipe for the party classic from the US
In the US, crispy chicken wings are not only served for the Super Bowl. The secret of really good chicken wings is: first season with a rub, then glaze and bake. If you use an oven, they become tender and crispy at the same time. And finally, you coat the wings again with the glaze.
Ingredients (serves 4):
Wings & Rub
2 kg chicken wings
1 tbsp smoked paprika powder
1 tbsp paprika powder, sweet
2 cloves of garlic
½ tsp chilli powder
1 tbsp brown sugar
Glaze
juice of one lime
2 tbsp honey
3 tbsp maple syrup
100 ml strained tomatoes or ketchup
1 tbsp olive oil
Tabasco
Salt
Pepper
Preparation
First prepare the glaze. Mix the lime juice with the tomato puree, olive oil, honey and maple syrup and season with Tabasco, salt and pepper.
Wash the chicken wings and pat dry. Peel the garlic cloves and chop very finely. Mix the spices in a bowl and rub them well into the chicken wings. Then coat with the glaze, preferably spooning it over, later a brush is helpful.
Preheat the oven to 200°C in the grill or hot air fry function. Spread the prepared wings on a baking tray with baking paper and bake for 15 minutes, then glaze a second time. Turn if necessary and bake for further 15 - 20 minutes. Then glaze again and serve hot.
The chicken wings go well with a fresh coleslaw and crispy potato wedges.
