Turkish pide pizza with minced lamb

Recipe for a traditional pide bread - a spicy turkish pizza with minced lamb

Most people kown the Turkish pizzas from their kebab around the corner. But also home-made they are easy to prepare and really delicious. It is worth to try it!

Ingredients (for 8 pieces)

for the dough:
450 g flour
½ cube of yeast (21 g)
3 tblsp oil
2 tblsp yoghurt
1 pinch of sugar
salt

for the filling:
250 g of minced lamb
2 tomatoes
½ red bell pepper
2 sprigs of thyme
1 Bunch of scallions
1 tbsp of black cumin / black onion seed
pepper

Preparation

Preheat the oven to 50°C. In a bowl, dissolve yeast with sugar in about 150 ml of water. Combine with flour, ½ tsp salt, 1 tbsp oil and yogurt and knead until you get a smooth dough. Switch off the oven, cover the dough and let rest in the oven for an hour (until almost doubled).
Wash and clean the peppers and cut into fine strips. Wash the thyme, shake it dry, peel the fine leaves and chop. Clean the scallions and cut in fine rings. Drop tomatoes into boiling water for 30 sec or one minute, skin them,remove the seeds and cut into cubes.
Heat the remaining oil in a frying pan and fry the mince. Season with salt and pepper and set aside.
Preheat oven to 225°C. Cover baking sheets with baking paper.
Place the dough on a floured surface; cut into 4 pieces (for medium pide) or 8 pieces (for smaller pide).
Knead the dough again, divide it into 8 portions, roll into ovals (12 inches/30 cm for medium pide or 6 inches/15 cm for smaller pide). You may try to let the borders stay thicker. Transfer the oval dough on the baking sheet. Divide filling in equal portions; spread on the dough; pinch the points together giving a boat-like shape.
Sprinkle the thyme and blackcurrant seeds, season with salt and pepper. Bake in the oven for about 20 minutes or until golden.
Serve with red onion rings with chopped parsley.

You can also fill the pide with spinach and sheeps cheese.
