Bhut Jolokia Chocolate Chili Flakes
Don’t be confused by the name “chocolate”, it describes the colour (the chilies are chocolate brown), not the taste!
The Bhut Jolokia (Bih Jolokia) variety was the spiciest chili in the world from 2007-2011, until it was outstripped by newer, spicier varieties. It originates from the region of Assam in India and has been cultivated and used there for many years. Investigations by the Chile Pepper Institute in 2005 gave it a value of 1.001.304 SHU, making the Bhut Jolokia the first chili variety to exceed the magic One Million mark.
The Bhut Jolokia chocolate chili flakes have a chocolate brown colour, and like the red Bhut Jolokia, are extremely spicy. They also have the typical flavour of the Bhut Jolokia, however the taste is slightly more bitter, and some claim it has a smoky citrus note. This flavour goes particularly well with Chili con Carne, hearty stews and soups, dark meat, and as an ingredient for grill marinades.
Production Info
We have our Bhut Jolokia chocolate chillies cultivated by a contract farmer, so we have influence on the whole production process, in particular the quality. The freshly harvested chillies are gently dried and then ground. In this way, the flavours are almost completely retained.
