Red pepper in brine
Our genuine red pepper (preserved in brine) is also called Pondicherry Pepper as it comes from this region on the South East coast of India.
Red pepper originates from fresh, non-dried and fully ripe pepper fruits. The fruits are pickled immediately after harvesting, so that no fermentation can take place as it does with white pepper.
It is spicier than green pepper, which is produced from unripe fruits, and due to its long ripening time has a full-bodied, fruity flavour. This flavour goes well with dark sauces, pan-fried meat, fish and game dishes. It is an aromatic and visual enrichment to steaks and salads.

This highly decorative spice is used mostly un-ground for sauces, or simply to aromatically and visually enrich steaks or salads.
Note: Red pepper should not be confused with pink berries, which are produced from the Schinus fruit and come from La Reunion and Brazil.
Shelf Life / Storage
Spices lose some of their flavour through incorrect storage. Spices should be stored in a cool, dry, dark and airtight place.more
