Pink Berries (Pink Pepper)
Pink Berries (also known as Pink Pepper) are the fruits of the Brazilian Pepper Tree (Schinus terebinthifolius), but they are not considered to be genuine pepper. For visual reasons they are used in pepper mixes, because they are less perishable then genuine red pepper.
Pink Berries have little spiciness, and have a mild, bitter-fruity flavour with a pleasant sweetness. Their flavour is slightly reminiscent of juniper berries, but is less intense. They give salads, soups, sauces and meat dishes a great visual finish. Their flavour harmonises well with fish and venison dishes, but they also refine rice and pasta dishes as well as desserts and sides. A particular taste sensation is dark chocolate with pink berries.
The fruits are also used as Christmas decorations, and so are also referred to as "Christmas berries".
Info: Pink Berries are a different type of pepper from "red pepper" or "red Kampot pepper" which are produced from the genuine pepper varieties (Piper nigrum L.).
