Wild Pepper (Szechuan)
Wild Szechuan Pepper is also known as Sichuan Pepper, Seechwan Pepper, Lemon Pepper, Anise Pepper and more.
Szechuan pepper is the fruit of a plant from the rue family and has nothing to do with black pepper. The reddish fruits do not carry their aroma in the seed like many spices, but - and this is really rather rare - in the seed capsule. The reddish-brown fruits are harvested when ripe and the bitter seeds are removed. The capsules are used dried whole or crushed in a mortar.
It is not so much hot as spicy, tingling and slightly lemony and is a very important and typical spice in Chinese, Japanese, Indonesian and Indian cuisine and an important ingredient in aromatic spice mixtures from the Szechuan province.
