Pyramid salt
Pyramid salt is an exquisite form of sea salt with an unusual pyramid shape.
The flakes of salt are brittle and release a very strong taste - a mouth-watering treat for any food-lover.
The pyramid-like structure is a result of the elaborate manufacturing process in which the pre-concentrated sea salt brine (in our case from the Indian Ocean) is heated very slowly. Small, cube-shaped salt crystals form on the surface, slowly bonding along their edges. If you take a closer look, you can see that the walls of the pyramids are formed of steps. Once the salt crystals are large enough, they simply have to skimmed from the top surface.
Just like fleur de sel, pyramid salt is used as a table seasoning, to added to food after cooking. Take care when adding to food, as it is saltier than normal sea salt. It is brilliant for seasoning cold meals and salads as well as for decorating dark foods and crockery. This salt is particularly popular for using in sweet desserts, with the stark contrast between sweet and salty unleashing a very special taste sensation.
