Cinnamon-Tree Flowers, whole

Cinnamon-Tree Flowers are the flavourful flowers of the cinnamon tree. They were formerly also known as cinnamon cloves, as their flavour is slightly reminiscent of cloves. Their flavour also has sweet and tart facets, such as orange peel, cinnamon and black pepper.

Cinnamon-Tree Flowers are ideal for mulled wine due to their intense flavour. They are also suitable for all types of desserts, baked goods, sweet dishes and pralines. In modern cuisine they are also used as a delicate accent for venison dishes, oriental rice and lentil dishes, poultry and as part of marinades.

They can be used whole or ground. They best develop their flavour when they are not heated above their boiling point.
