Café de Paris herb butter spice preparation
Café de Paris is a classic spice blend in French cuisine. It originates from an elegant restaurant in Paris - "Café de Paris" - in which only one hot dish has been on the menu since the 1930s, namely Entrecôte with butter sauce, green salad and French fries. The highlight of this dish is the butter sauce, which this very spice mix was named after: a taste explosion of selected ingredients, including turmeric, paprika, mustard, coriander, ginger, fennel etc.
This fresh herb and spice combination is perfect for steaks, herb butter or escargot.

Café de Paris Butter Recipe:
Ingredients:
125 g Butter
20 - 40 g finely chopped anchovies
2 -4 tsp Café de Paris spice preparation
1 tbsp. Cognac
1 tbsp. finely chopped Capers
1 pinch of salt
1 pinch of Cayenne pepper
Preparation: Mix all the ingredients with the soft butter and then leave this to harden in the fridge.
Further interesting ingredients for a herb butter are: Lemon juice, Worcestershire sauce, Madeira in combination with anchovies and Café-de-Paris spice mix.
