Obatzda spice mix
With this Obatzda mix made from fine spices, wild garlic and chives, you can make the popular Bavarian cream cheese yourself. You will need mature Camembert, creamy stirred butter, finely chopped onions and some wheat beer.
The cream goes well with fresh pretzel breads and savoury bread.
The spice also refines Quark (white cheese) and can be stirred into dips and herb butter.
By the way: In the Bavarian dialect, "Obazen" means "to mix together".
Shelf Life / Storage
Spices lose some of their flavour through incorrect storage. Spices should be stored in a cool, dry, dark and airtight place.How to use
Obatzda Preparation: Stir 200g of mature soft cheese (e.g. Camembert) with 30g of creamy stirred butter, one very finely chopped onion, some salt, the Obatzda spice mix and some wheat beer into a cream.
For stronger variants try Limburger or Romadur, for milder variants Quark and cream cheese.
