Ras el hanout is a popular Moroccan blend of spices, which literally translates as "head of the shop". It is a very aromatic and well-balanced composition comprising 20 different ingredient, including intensely aromatic cumin, cinnamon, cardamom and hot varieties of pepper, which are rounded off with the fresh floral aroma of orange, cinnamon, rose and lavender.

Ras el hanout is used in Morocco and Tunisia to make traditional North African rice and wild game dishes, mutton stews and desserts as well. It is a wonderful way to enhance couscous and rice. The exotic spice mix gives chicken or meatball curries a very intense aroma. Lamb rissoles in particular definitely need a touch of ras el hanout.
