Tonka Beans, whole
Tonka Beans are a real insider tip for fancy desserts.
Tonka Beans are the seeds of the tropical Tonka Bean tree that are harvested, preserved in rum, and then gently dried or fermented. This allows them to develop their unique, intense flavour.
Their scent and flavour is a herby sweet mix of vanilla, rum, hay flowers, woodruff and the slightly bitter flavour of bitter almonds. Their hay-like note is typical of spices which contain coumarin. Due to the coumarin content, no more than 20 mg of Tonka beans should be used per dish. More is generally not needed due to the intense flavour.
You can either crush the Tonka Beans with a nutmeg grater, or boil them for approx. 10 minutes in the milk required for the dessert.
Tonka Beans season Christmas stollen, ice cream, creamy dishes, baked goods, chocolate desserts and pralines. They can also be used as an interesting accent for oriental dishes, venison stews or tomato sauces.
