Traditional Lebkuchen Spice Mix
Christmas just wouldn`t taste the same without the delicate flavours and incomparable aroma of the completely natural ingredients that are combined in this "nine-spice" traditional lebkuchen spice mix.
This traditional spice mix comes from the south of Germany; the nine ingredients are said to symbolise the glory of God (they represent the Holy Trinity of the Father, the Son and the Holy Spirit, the elements earth, air and water and the trinity of Earth, Heaven and Hell).
The traditional "nine-spice" mix gives lebkuchen biscuits their distinctive Christmassy aroma, but they can also be used for other things such as desserts, cakes, sauces and even savoury dishes, e.g. wild boar goulash.
2 tbsp lebkuchen spice mix are sufficient for approx. 500g flour.
Liegnitz Lebkuchen Recipe: Melt together 300g honey, 250g sugar and 125g butter. Mix with 5 tbsp water, 125g ground almonds, 150g currants and chill. Stir 2 tbsp Traditional Lebkuchen Spice Mix, 3 eggs, 50g cocoa, 500g flour and ammonium bicarbonate (baker`s ammonia) and potash (5g each) dissolved in water into the dough, until a firm mass is formed. Roll the dough out to 0.5cm thick. Place on baking tray and continue to roll out. If you are using cookie cutters, only roll the dough out half as thick. Bake for about 10 minutes on the middle shelf at 180°C - 200°C. Cover the freshly baked lebkuchen with chocolate sprinkles. Enjoy eating these special treats!
