Potash
Potash is an important baking agent that has been a key ingredient in traditional German Christmas baking for centuries.
Potash helps particularly dense bread and lebkuchen doughs to rise, although it does the cause the dough to spread wider rather than rise higher like yeast or sourdough. This is what makes it an especially important ingredient in honey doughs (flat biscuits), lebkuchen and other traditional Christmas biscuits.

In chemical terms, potash is known as potassium carbonate (K2CO3), the carbonated potassium salts, and it forms a white hygroscopic powder. The name derives from the traditional production method, whereby salts were leached from wood ash in water and then heated and evaporated in pots until only the white powder was left.
Can irritate the eyes, lungs and skin. Appropriate protective gloves, eyewear and face masks should be worn when handling potash.

Andere Verwendungsmöglichkeiten: Zum Entfernen von angebrannten Resten aus Töpfen. 1 Esslöffel auf die Kruste im Topf geben, über Nacht stehen lassen und am nächsten Tag mit 1 Tasse Wasser aufkochen. Die Rückstände lösen sich flockig vom Topfboden.
