Cannolicchi
Cannolicchi are twisted noodles, whose name comes from the similar looking Sicilian puff pastry rolls filled with ricotta cream and candied fruit.
The noodles take up very well liquid and are therefore well suited to delicately spiced vegetable dishes and ragouts and to seafood. They are also very suitable as soups, for example in the Neapolitan minestrone and for pasta salads.
Cooking time 7 - 9 minutes. For perfect pasta bring 2-3 l water with 1 tbsp salt to the boil.
Make the bite test just before the end of the cooking time: Cannolicchi are perfect when they are no longer hard, but just still al dente.
