Fregola sarda tostata - roasted noodles
Fregola sarda tostata is a rare specialty from Sardinia. The pearled pasta made of durum wheat is slightly roasted and therefore gets a special taste.
It is often used as a special ingredient in fish soups, but also tastes in vegetable soups and is a nice alternative in vegetable salad. Also ideal for hearty stews with legumes. And it is a sensational pasta dish if served pure with olive oil and fresh herbs!
Cooking time 14-17 minutes. For perfect pasta bring 2-3 l water with 1 tbsp salt to the boil.
Make the bite test just before the end of the cooking time: Fregola sarda tostata are perfect when they are no longer hard, but just still al dente.
