Sweet tarte flambée with wild berries
Recipe for sweet tarte flambée with wild berries and vanilla ice cream baked in the wood oven
Lovers of tarte flambée should definitely try a sweet variant. If you don’t have a wood fired tarte flambée oven, you can use an electric oven on the maximum heat (250-300°C).
Ingredients:
- Tarte flambée base (order a very good quality version online: here)
- Crème Fraiche (ca. 150 g per base)
- Sugar
- Salt
- Green Tabasco chili powder
- Frozen wild berry mix
- Vanilla ice cream
- Fruit schnapps
Mix together some sugar, a pinch of salt, and depending on your desired spiciness some Tabasco powder, with the crème fraiche, and spread this evenly on the tarte flambée base. The crème fraiche should taste sweet but not too sugary. Generously distribute the frozen wild berries on the tarte flambée base. Now place the tarte flambée in the oven, and depending on the temperature, bake for between 3-10 minutes. As a rule of thumb, it should be crispy and light brown, but never black and burned - then it’s exactly right. Place the tarte flambée onto a board and cut it into pieces with a pizza cutter. Then add some scoops of vanilla ice cream and a few splashes of fruit schnapps, and you have a brilliant dessert. This recipe has been enjoyed by our friends and family for years.
